Description

This vegetable dish is great with or with out the leeks, but if you have not experienced the savory flavor of leeks this is a great way to try them. The leek is part of the onion family and can be found in most retail stores in the fresh vegetable section. The one thing to remember is to make sure the dirt is washed out in between each layer.

Ingredients

1 leek
2 tablespoons olive oil
2 cloves garlic, chopped
1 ½ pounds fresh green beans, washed and stems removed
1-2 cups water
½ teaspoon salt
½ teaspoon freshly ground pepper

Instructions

Prepare leek: Cut the top dark green ends off the leek, about 2 inches usually. Cut the leek lengthwise in half; slice each half in ¼ in slices. Place into a colander as rinse thoroughly until all the dirt is removed. Shake off any excess water.
Place the olive oil into a large skillet over medium high heat until hot, but not smoking, add the prepared leeks and garlic stir until coated and cook until the leeks are slightly golden brown. Set side.

Green Beans: Place green bean in a 2 quart pot or larger. Add water, cover with a lid. Place over medium high heat. Cook until the green beans are bright in color and tender, but still a bit firm about 8 minutes. Drain excess water from pan and toss in leek mixture, salt and pepper. Adjust seasonings as needed. Serve promptly.
