Individual Spinach Pie Triangles

Description

Yeilds: 72 pieces (this recipe can be cut in half)
Oven temp: 400° F
Bake Time: 15 min approximately

Ingredients

3-4 Tbs. Olive Oil
1 large Onion, chopped finely
1 bunch Green Onion chopped, including green stem
4 cloves Garlic, finely chopped
1 bunch Italian flat parsley, remove stems and chopped
½ Tbs. Dried dill ( ¼ c fresh dill chopped)
2 Whole Eggs (can use egg whites only)
1 LB. Greek Feta cheese
6 oz Ricotta cheese – (can be part skim, or low fat)
½ tsp. Nutmeg – freshly grated is the best
Sea Salt – to taste
Freshly ground pepper – to taste - but a little more than to taste
1-2 pkgs Phyllo Dough Sheets, thawed
2 – sticks Butter, melted (optional)

Instructions

1.) Add the oil to a large sauté pan. Heat over a medium – high heat, add the chopped onion, green onion, and garlic to the pan. Stir together and cook until the onions are clear and start to turn brown.
2.) Add spinach, parsley and dill. Blend well. Continue to cook until spinach is completed blended evenly through and there are no large chunks. Remove from the heat and set aside.
3.) Place the eggs into a large mixing bowl. Using a wire whisk, whisk the eggs together. Crumble the feta into the egg mixture. Add the Ricotta cheese.
4.) Add one-third the spinach mixture. Blend well using a spoon or spatula. Add the remaining spinach mixture one third at a time, blending well after each addition.
5.) Mix in the nutmeg, then season to taste with the salt and pepper. Set aside.
6.) Cut the phyllo dough into 2” X 12” strips and cover wit a towel to prevent drying out. (basically, cut the sheets into 4 equal section, length wise)
7.) Taking one sheet brush the facing up side completely with olive oil or melted butter.
8.) Place approximately one tablespoon of filling ½ inch away from the bottom of the end. Carefully, fold over one side of the phyllo dough making a slight triangle. Then take that and fold it over completely, the fod on an angle and repeat. They should look like triangles. Continue to fold until the strip is completely folded.
9.) Place onto a baking pan approximately ½ inch apart brush tops with egg wash (egg and milk/water mixed together (1 egg to 1-2 Tbs of liquid)) or melted butter. Bake until golden brown, approximately 15 minutes

** Option – do ahead appetizer – place triangles on the baking tray and freeze – once they are completely frozen – place into a freezer bag and use when you need them – this can be done one month ahead in a freezer used everyday or for up to a year in a deep freezer. Remove from freezer when you are ready to use and place directly onto a baking pan – bake at 400° F for 20 minutes or until golden brown.
